Ruex Cafe and Bar offers Australian-inspired brunch in Greater Vancouver. I tried the Pork Belly Eggs Benedict, which featured extremely tender, melt-in-your-mouth pork belly. The roasted red pepper hollandaise was so flavourful and the egg was perfectly poached. The pave potato was incredible too. The layers of thinly sliced potatoes were an absolute masterpiece on its own.
