8bite is a video-game-themed food truck serving up yummy sandwiches with a side of popcorn. I really enjoyed the QBN, a Cubano sandwich pork shoulder, dill pickles, mustard sauce, and sharp white cheddar. For dessert, you have to try their lucuma ice cream treat!
